The Perfect Simple Quinoa

Ingredients:

  • 1 Cup Quinoa (cleaned)
  • 2 Cup Water
  • 1 Tbsp. Sofrito
  • 1/2 Tbsp. Olive Oil
  • 1/2 tsp. Salt
  • 1/4 tsp. ground Black Pepper
  • 1 oz. Raisins (optional)

Procedure:

  1. Heat olive oil and sofrito on a sauce pan at medium high heat for 5 minutes.
  2. Add water, salt and pepper and bring up to a boil.
  3. When boiling, add Quinoa, and bring back to a boil and cover with tight lid.
  4. Once it boils, simmer Quinoa until no water is left (approximately 12-15 mins) at medium low heat.
  5. Remove from heat and transfer to a bowl, add raisins.
  6. Serve. Enjoy!

 

stuffed chicken

Ingredients:

  • 1 Chicken Breast, flattened (Scaloppini)
  • 2 oz. Chimuchurri Sauce, to marinate
  • 2 oz. Bacon Bits
  • 3 slices of mozzarella cheese, fresh
  • 1 tsp. of red Onions
  • 1/4 tsp. Salt & Pepper
     
  • 1 Tbsp. Sofrito
  • 1/2 Tbsp Olive Oil
  • 1 oz. Onions, small diced
  • 1/2 oz. green Peppers, small diced
  • 2 ea Mushrooms, thin sliced
  • 2 oz White Wine
  • 3 oz. Bacon bits
  • 2 oz. Chimichurri sauce
  • 4 oz Heavy Cream
  • 3 oz. Parmesan Cheese, freshly grated or shaved
  • 1/2 tsp. Salt
  • 1/4 tsp. ground Black Pepper
  • 1 tsp. oregano, dry
  • 1 tsp. parsley, dry
  • 1 tsp. Cilantro, dry

Procedure:

  1. Pre heat oven at 500 F (bake)
  2. Marinated Chicken breast with chimichurri sauce, salt and pepper (if needed).
  3. Place chicken in a flat surface and add the first list of ingredients on top of the chicken.
    *Note: Make sure the nice part of the chicken is facing the counter.
  4. Roll chicken tight, enough for the ingredientes to stay inside. You may use toothpicks or bamboo skewers to help it stay close.
  5. Spray a baking sheet with non-stick spray or oil, place the stuffed chicken in the oiled sheet and cook in oven for 10 minutes.
    *Note: Since the oven is at high temperature and the chicken is flattened (about 1/4" thick), it cooks faster.
  6. While the chicken is in the oven, start making the sauce.
  7. Heat a sauté pan with the oil.
  8. Add sofrito and bacon bits and cook for about 5 minutes in medium high heat.
  9. Add the onions and cook until translucent, then add peppers and cook for 3 minutes.
  10. Add mushrooms and cook for about 3-4 minutes.
  11. Add White wine and deglaze for about 1-3 minutes (until almost no wine is left).
  12. Add heavy cream and parmesan cheese and spices. Cook until desired consistency and thickness.
    *Note: Please feel free to add any of your favorite spices.
  13. Take out chicken out of the oven and check for temperature (165F - liquids are clear and no sign of blood).
  14. Serve the chicken with the sauce on top.
